If you're longing for spring, you can sprout some grass in about three days (no kidding . . . this stuff grows very, very quickly) in a windowsill that gets even a little light. (I have mine in the kitchen window which has a large overhang and no direct sun, but they still are growing like crazy.)
I used a packet of Renee's Garden Mixed Greens. I found them at our local Smith & Hawken, but I've seen them at regular nurseries, too. It's marketed as "Gourmet Cat Treats," but all it is is a mixture of equal parts rye, oats, barley, and wheat grasses. Sprinkle several seeds in some potting soil (or use Jiffy's Quick Soil Mix, which are the little pellets that expand when you add water, and are perfect for starting seeds), and keep them damp.
Let the kids give them haircuts every couple of days with the scissors. :) It's so fun.
