Do you have plans for food on Christmas Eve? Does your family have any Christmas Eve food traditions? I decided this morning that I will make my mom's White Chicken Chili for the three of us. (We will go to my parents' house on Christmas Day for the real feast!) Here is the recipe, in case this winter you need some good comfort food. I've posted it before, but it's my favorite, so here it is again. :)
My Mom's White Chicken Chili
1 lg sweet onion,
minced
1 clove garlic,
minced
olive
oil
2 cans small white
beans, S&W, drained
2 c chicken
stock/broth
2 c more or less
cooked, shredded chicken breast meat
4 oz can chopped Ortega mild green
chilis
2 t
cumin
1/4 - 1/2 t cayenne
pepper - (1/2 = very hot)
salt and pepper to
taste
1 c sour
cream
1 c shredded cheese,
cheddar or Colby/Jack
In a large pot, sauté onions until transparent; add garlic and sauté. Add beans, chilis, broth, cooked chicken, cumin, cayenne pepper, salt and pepper. Bring to a boil; reduce heat and cook uncovered at a simmer for 45 minutes. Add cheese and stir constantly until cheese is melted. Remove from heat; add sour cream. Serve with warm tortillas or corn bread.
