Thin, yummy spring pencil asparagus is on sale at my grocery store for 97 cents a bunch. I love asparagus. Do you? How do you like to cook asparagus?
Sometimes I just throw them on the George Foreman and grill them.
But my favorite way to cook it is to snap the ends off, spread it out on a cookie sheet lined with aluminum foil, drizzle it with some olive oil, sprinkle it with lemon pepper, toss them with some tongs to get them all coated, and put it in a 425 degree oven for about 7 to 10 minutes. (I just keep tasting them until they seem cooked but still crispy. If you're using the regular fatter aspargus, it will take longer.) We have this maybe once a week during spring when asparagus is cheap.
